Brunch Series Dish 3: Poached Lobster Benny, Waffle, Plum Tomato Jam, Gruyere, Chive Hollandaise

Here is a dish just recently launched onto our brunch menu. We use 100% Oceanwise lobster from Fabian Bates at Sing Sing lobster. This is a really nice balance of sweet tart tomato jam and rich gruyere cheese which sitting on the waffle absorbs all the released moisture. Its a nice twist on the classic eggs benedict and has gone down very well with our guests.

  2. I love how that picture looks! It really looks mouth-watering, and sweet and healthy at the same time, and from where I am, just looking at the picture makes me want to go and try out the dish and see for myself how delicious it really is. The waffle is in my favorite breakfast treat. Not to mention a lot of people like seafood. It is a lovely menu and perfect for brunch. My sister studied culinary, and she used to make her “roast chicken” and it was really delicious, and she would be happy when we compliment her food.
